Dipolog City

Dipolog City by its geographic location is abundant of marine resources.  Fishing was a means of livelihood for most local folks in earlier generations who migrated into the city from nearby provinces of Negros, Bohol and Cebu.  Local fishing is a promising market and in fact Dipolog City recently known as the capital bottled sardines city of the Philippines.

Fishing is seasonal in Dipolog.  Month of October until May are the most productive seasons.  For the rest of the months, June to September, the supply of marine resources declines due to the seasonal typhoon usually occurs during these period.      

The abundance of marine resources in Dipolog past three decades ago sometimes leads to waste of resource whereby the supply is abundant however the demand and consumption is less.  Creativity of the local folks in utilizing the resources was the idea and birth of bottled products to mitigate from waste of marine resources.  It opens a door of opportunities and means of livelihood.  Producing products out of the resources that can be preserved for longer periods and serve as food such as bottled sardines, bottled salted fish, bottled fermented fish intestines a.k.a “Dayok” and dried fish.   
   

Dayok

Dayok is a mixture of different fermented fish intestines.  In Dipolog City, Philippines, local folks started producing these product three decades ago and continuously producing today.  It was famous in the local community as food appetizer.  A suitable gravy for grilled fish, grilled pork, lechon or even a side dish for steam potato and banana.  Mixed with a piece of lemon and red chilli, Dayok is a perfect gravy and side dish in your meal.      

First glance of the product looks like a kinda weird food.  You won't be impress and hesitant to taste perhaps it contradicts your taste bud.  The product image content somewhat similar with salted fish a.k.a "Ginamos".
What’s unique with Dayok is the mixture of vegetarian ingredients that add savor on the product unlike with salted fish which contains purely vinegar and salt.  Dayok is best serve with a piece of lemon and red chili to spice up your appetite.

Below is a snapshot on how Dayok looks like and the finish bottled product.  These product taste awesome if you get to used on foods like salted fish and dried fish in your diet.  As a Filipino,  it's common on my diet for foods like salted fish and dried fish therefore I get to used on the taste.  Enjoying and savoring the uniqueness of Filipino dish.
